Simnel Cake

Preheat oven to 350°

Batter

  • 3/4 lb butter
  • 1 lb sugar
  • 6 eggs
  • 2 1/2 cups sifted flour
  • 12 oz currants
  • 1/2 cup mixed peel put through a meat grinder

Create together butter and sugar. Beat in eggs, one at a time. Add flour currants and mixed peel. Mix all well.

Almond paste filling:

  • 6 oz almond paste
  • 3/4 cup granulated sugar
  • 2 eggs
  • 6 Tbs flour to stiffen

Mix all ingredients thoroughly.

Line cupcake tins with paper liners. In each section put 1 tsp cake batter, 1/2 tsp paste. Top with cake batter.

Bake 30 minutes

 

Simnel cake originated years ago in connection with Mothering Sunday, which has nothing to do with our (American) Mother's Day. In England, Mothering Sunday was a day in March when girls in domestic service were given a day off to visit their mothers and take them a cake and flowers. Even today, in country churches in England, children are often given a posy in church to take home.
